"I have grown up in a self-sufficient family in Djursland, so that the love of proper raw materials and honest craftsmanship has come in from childhood. I love smørrebrød, but most of all I love the treasure chest of good raw materials and cooking methods that the classic Danish lunch originates from. Just the lunch - and especially the smørrebrød - is the place where Danish cuisine has really manifested itself.
For me, the lunch table is a valuable tradition where the family gather to spend time with each other and the food. Therefore, it is the lunch that constitutes the focal point of Aamanns'.
Our mission is to revitalize and update the Danish smørrebrød to a timeless and surprising but still recognizable form in which the taste is paramount. Although our sandwiches originate from the classic tradition, we are not afraid to challenge the common standards, and are constantly working on adding new ideas and tastes.
At Aamanns, the foundation is the organic sourdough bread, which contributes with texture, sweetness and bitterness, and constitutes a taste and consistency counterpart to the order.
Bread, toppings, vegetables, herbs, emulsions and crispy elements are meticulously dosed, and together make up a complete aesthetic whole focusing on the overall taste impression.
Respect for the cookery craft is a driving force, which means that we make things from scratch, and from proper raw materials. We therefore choose to cook, braise, roast and bake ourselves. Fruit and vegetables are in season, the fish is sustainable, and the meat comes from animals that have lived a decent life in the open, just as cereals and dairy products are organic.
