Kappo Shunsui is helmed by Chef Nobu Nishi and serves Kappo-style cuisine in an intimate setting. Reminiscent of kaiseki-style private dining experiences, Kappo Shunsui is located in Cuppage Plaza and features just 19 seats. All the ingredients used here are imported from Japan, while the menus change daily depending on the best produce delivered. The name Shunsui is derived from the words ‘shun’ (Japanese for ‘season’) and ‘sui’ (which means ‘water’ in Japanese).
He learnt his culinary technics and knowledge under the legendary Chef Hideki Ishikawa, the Owner-Chef of Tokyo’s Three Michelin Starred restaurant, Kagurazaka Ishikawa, who he cites as one of his biggest culinary influences. The road eventually led to his arrival in Singapore, where he got talent scouted to take over the reins of Kappo Shunsui.
The sake list at Kappo Shunsui is an impressive curation of close to 100 different labels, which are available from $17 per 180ml. For an additional price of $69, diners can opt for a sake pairing, to which Chef Nobu can recommend according to what is on the menu. 6 different kinds of sake (45ml each) will be served for a specific course.
